Sodium carbonate (Na2CO3) has a molecular weight of 105.99. The chemical purity is over 99.5% (by mass fraction). It is commonly called soda ash. Although it is named so, in terms of classification, it belongs to the category of salts rather than alkalis. In international trade, it is also known as soda or soda ash. Application
During the fermentation process of dough, microorganisms produce acidic substances, which cause the dough to become sour. Food-grade light soda ash can neutralize these acidic substances and adjust the pH of the dough, making the dough softer and more elastic, thereby producing delicious pasta such as steamed buns and bread.
It can neutralize organic acids or sulfides adhered to dark green vegetables due to excessive spraying of pesticides, thereby retaining the original color of the vegetables and removing the pollution of pesticides on vegetables to a certain extent.
