Sodium metabisulfite (chemical formula: Na2S2O5), also known as sodium pyrosulfite, disodium metabisulfite, or disodium dithionite, is an inorganic compound. It has a relative density of 1.48 g/cm³, and a melting point of 150°C. It is easily oxidized to sodium sulfate in the air.
• It is a strong reducing agent, releasing (SO2) when in contact with strong acids and reacting with bases to form sodium sulfite.
• It is highly soluble in water, forming an acidic solution with a pH of approximately 3.5-5 (50 g/L, 20°C).
• It decomposes easily when exposed to moisture and releases SO2 when heated above 150°C.
• It is soluble in water (65.3 g/100 mL, 20°C), readily soluble in glycerol, and slightly soluble in ethanol.
• It easily absorbs oxygen from the air and is oxidized to sodium sulfate.

1. in the Food Industry
• Preservative and Antioxidant: Used to prevent food from oxidation and spoilage, thereby extending the shelf life. Commonly used in foods such as wine, beer, juice, jam, and candied fruits.
• Bleaching Agent: Used to remove pigments from food to maintain its color. For example, it prevents oxidation and discoloration in fruit processing.
• Freshness Preserver: Used for the preservation of fruits and vegetables, preventing the growth of microorganisms.
2.in the Papermaking Industry
• Bleaching Agent: Used in the bleaching process of pulp, it can effectively remove pigments from the pulp and increase its brightness. Sodium metabisulfite achieves the bleaching effect by reducing colored substances in the pulp to colorless or light-colored compounds.
• Dechlorinating Agent: In the washing process after pulp bleaching, it is used to remove residual . Residual can cause discoloration of paper or reduce its strength. Sodium metabisulfite reacts with residual to form harmless chlorides, thereby ensuring the quality of the paper.
3.In the photography industry
• Component of Fixer: Sodium metabisulfite is one of the important components in photographic fixers. It reacts with unexposed silver halides (AgX), dissolving and removing them from the film or photographic paper, thereby completing the fixing process.
• Antioxidant: During the photographic developing process, sodium metabisulfite can also act as an antioxidant, preventing oxidation of the film or photographic paper during processing, and thus protecting the quality of the image.
4.in Water Treatment
• Cyanide Removal: In industrial wastewater treatment, sodium metabisulfite can react with cyanide (CN-), reducing it to harmless cyanate (CNO-) or other forms, thereby reducing the toxicity of the wastewater.
• Residual Removal: In municipal and industrial water treatment, sodium metabisulfite is used to remove residual from water. Residual can cause equipment corrosion or have adverse effects on subsequent processes. Sodium metabisulfite reacts form harmless chlorides.
• Deoxygenating Agent: Sodium metabisulfite can also be used as a deoxygenating agent to remove dissolved oxygen from water. This is particularly important in boiler water treatment and pipeline systems, as dissolved oxygen can cause metal corrosion.
