Characteristics:
• Solubility: It is readily soluble in water and ethanol, and its solubility in water increases with temperature. For example, at 0ºC, 52.9g can be dissolved in 100ml of water, and at 100ºC, 73.3g can be dissolved.
• Hygroscopicity: It is prone to deliquescence in humid air, and will effloresce and lose its water of crystallization when placed in dry air.
• Stability: It is stable at room temperature, but will dehydrate when exposed to high temperatures. It will melt and decompose at 116-118ºC, form basic magnesium chloride and hydrogen chloride at temperatures above 170ºC, and decompose into magnesium oxide and hydrogen chloride at 600ºC.
• Taste: It has a bitter and salty taste.

Application

Making tofu: Hexahydrate magnesium chloride is a commonly used coagulant for making tofu. The tofu made with its aqueous solution (brine) has a tender and smooth texture, is elastic, and has a rich beany flavor, which is better in taste than tofu made with gypsum. This is because magnesium chloride can react with the proteins in soy milk, causing the proteins to coagulate and form tofu.

Making dried tofu and fried tofu: In the production process of dried tofu and fried tofu, hexahydrate magnesium chloride, as a protein coagulant, can make the structure of soy products more compact and less prone to breaking, thereby improving the quality and taste of the products.
