Food grade Magnesium Chloride Hexahydrate, with the chemical formula MgCl2·6H2O, is a white crystalline substance, presenting in columnar or needle-like shapes, and has a bitter taste. It is easily soluble in water and ethanol and is prone to deliquescence in high humidity conditions.
Generally, the mass fraction of magnesium chloride (MgCl2) is required to be ≥45.0%, sulfate ion ≤0.4%, alkali metal chloride (calculated as Cl) ≤0.90%, lead content ≤1mg/kg, content ≤0.5mg/kg, and ammonium content ≤50mg/kg1.
