Food grade Magnesium Chloride Hexahydrate, whose chemical formula is MgCl2·6H2O, appears as a white crystalline material. It takes on columnar or needle-like forms and tastes bitter. It can dissolve readily in both water and ethanol. Moreover, it tends to deliquesce when the humidity is high.
Typically, the mass fraction of magnesium chloride (MgCl2) is demanded to be no less than 45.0%. Meanwhile, the content of sulfate ion should be less than or equal to 0.4%, that of alkali metal chloride (calculated as Cl) should be no more than 0.90%, the lead content must be lower than or equal to 1mg/kg, the content should be limited to 0.5mg/kg at most, and the ammonium content has to be within 50mg/kg.
