Sodium bicarbonate is used as a leavening agent in bread - making. When acidic substances are produced during dough fermentation, sodium bicarbonate reacts with them to produce carbon dioxide gas. For example, in a typical recipe for staple bread, 3 - 5 grams of sodium bicarbonate might be added per 1000 grams of flour.
