Sodium bicarbonate will remain sodium carbonate after the action, and too much use will give the finished product an alkali taste.
1. Chemical Properties
• Weak Alkalinity: Sodium bicarbonate (baking soda) exhibits weak alkalinity when dissolved in water, with a pH value of approximately 8-9. It is capable of neutralizing acidic substances.
• Thermal Stability: It is relatively stable at room temperature but gradually decomposes when heated above 60°C, forming sodium carbonate, water, and carbon dioxide gas. This property makes it useful as a leavening agent in baking.

1. Synthesis Method: Sodium bicarbonate is primarily produced using the Hou's process (Hou Debang method). This method uses table salt (sodium chloride), and carbon dioxide as raw materials. Is first introduced into saturated brine, followed by carbon dioxide, resulting in the formation of sodium bicarbonate crystals. The product is obtained through filtration, washing, and drying.
2. Purification: During the production process, impurities are removed through multiple washings and filtrations to ensure the purity and quality of the product.
