Sodium carbonate, with the chemical formula \(Na_{2}CO_{3}\), has a molecular weight of 105.99. Its chemical purity, expressed as a mass fraction, exceeds 99.5%. Widely referred to as soda ash, despite the name, it falls into the salt category rather than being an alkali in chemical classification. In international trade circles, it is also recognized as soda or soda ash. Appearing as a white, anhydrous substance in the form of powder or granules, sodium carbonate is a vital raw material in manufacturing glass, detergent chemicals, and numerous other industrial products.
There are two main grades of soda ash: light soda ash and dense soda ash. Chemically, both grades are identical. However, physically, they differ in aspects such as bulk density, particle size, and particle shape. These physical disparities influence their flow properties and the angle of repose.

Application
When dough undergoes fermentation, microorganisms generate acidic substances, resulting in a sour taste in the dough. Food - grade light soda ash is capable of counteracting these acidic substances. By doing so, it modifies the pH level within the dough. This action not only softens the dough but also enhances its elasticity. As a consequence, it enables the creation of mouth - watering pasta products like steamed buns and bread.
Food - grade light soda ash has the ability to react with and neutralize the organic acids or sulfides that have adhered to dark green vegetables as a result of over - spraying pesticides. This process helps the vegetables maintain their original color. Moreover, to a certain degree, it alleviates the pesticide contamination on the vegetables.
