Application
In food processing, after many fruits and vegetables (such as apples, potatoes, etc.) are cut or damaged, due to the contact of polyphenol oxidase (PPO) in the tissue with oxygen, enzymatic browning will be triggered. Food-grade sodium sulfite can inhibit the activity of PPO. It can bind to the copper ion at the active center of the enzyme, change the conformation of the enzyme, thereby making the enzyme inactive and slowing down the speed of the browning reaction.
Sodium sulfite is an effective antioxidant that can prevent the oxidation of ingredients such as oils and vitamins in food. The oils in food are easily oxidized during storage, producing rancid tastes and harmful substances. Sodium sulfite can react with oxygen first, thus protecting the oils in food.
