Application
In flour processing, anhydrous sodium sulfate can change the gluten network structure of flour and enhance the toughness and elasticity of gluten. This is because the sodium ions and sulfate ions in anhydrous sodium sulfate can interact with the protein in flour, changing the intermolecular forces of gluten protein and thus improving the processing performance of dough.
In the storage process of some pickled foods (such as pickled vegetables, salted fish, etc.), placing a small amount of anhydrous sodium sulfate around the storage container can also help reduce the environmental humidity, inhibit the growth of microorganisms, and extend the freshness period of pickled foods.
Food-grade mirabilite has certain hygroscopicity. It can absorb excess moisture in the environment around food and reduce environmental humidity, thereby slowing down the growth and reproduction rate of microorganisms and prolonging the shelf life of food. At the same time, in the preservation process of some dry foods, mirabilite can be used as one of the components of desiccants and be used in conjunction with other desiccants (such as silica gel) to form a more effective drying environment and prevent food from getting damp, mildewing and deteriorating.
