Sodium bicarbonate appears as a white powder or opaque monoclinic fine crystals. It is odorless, has a faintly salty taste, and exhibits a cool nature. It readily dissolves in water and glycerol, and is only slightly soluble in ethanol (while some sources state it is insoluble). Its solubility in water is 7.8 grams at 18 ºC and 16.0 grams at 60 ºC. With a density of 2.20 g/cm³ and a specific gravity of 2.208, it finds extensive applications in the food, feed, and industrial sectors. Sodium bicarbonate is a frequently utilized food additive, primarily serving the purposes of fermentation and flavor enhancement.
